Are you, like us, trying to be "good" at the moment? Not saintly or spartan but just trying to keep your energy levels up without the need to be fuelled by caffeine and chocolate! If so then we hope you'll enjoy this recipe, as well as being totally yum they are low GI, full of "good for you" things and really easy to make. You'll need....

250g porridge oats
150g grated cheese
50g butter or 2 good glugs of rapeseed oil
2 x free range eggs
2 x grated carrots
2 or 3 handfuls of mixed seeds (pumpkin, linseeds, sunflower, sesame etc.)
Cayenne pepper, salt and pepper (optional)
 

Melt the butter, beat the eggs and stir it all together. Put in an ovenproof dish and cook for 25-30mins at 180C, then cut when cool.
You can actually add whatever you like, it's lovely with added grated courgette, herbs, chopped celery etc. You might just find that they are a little bit too moreish! Enjoy, and please do let us know if you've got any healthy favourites that might help keep us on the straight and narrow! xx
